Meet the Maker!
Kimberly Crupi Dobbins is passionate about health and nutrition. She’s also got an irrepressible sweet tooth. Sounds like a recipe for disaster, doesn’t it? But she managed to bring her two passions together into one virtuous victual: Simple Squares.
In 2007, Dobbins undertook a 42-day trip traveling the world. During the trip, she observed dietary traditions from a variety of nations and cultures, and it reinforced her love of pursuing wellness through nutrition. So, when she returned home, she enrolled in the Institute for Integrative Nutrition and became certified as a holistic health counselor.
Coincidentally, around the time she graduated, she went to see a holistic doctor for a dermatologic problem. The doctor placed her on a restrictive diet, eliminating wheat, gluten, dairy and refined sugars; only after 60 days could she begin to reintroduce those items to determine which were the culprits. The diet put her system back into balance, but left her craving the sweet stuff she loved. So she decided to create a treat that satisfied her sweet tooth but could enjoy without interrupting the healing process.
She drew inspiration from her world travels: In India, she first learned of ways of incorporating the medicinal benefits of herbs and spices in her cooking. Peru opened her eyes to simple yet powerful superfoods like quinoa, maca and coca. She found Sydney, Australia, to have a wonderfully health-conscious attitude, as expressed through macrobiotic restaurant Iku.
Working with just six base whole ingredients - nuts, honey, coconut, vanilla, sea salt and herbs — she began to experiment with flavor combinations. She wanted a sweet treat, but tempered with savory herbs for a more sophisticated flavor. Bringing home bales of herbs from the farmers’ market, she played with combinations. Lavender had promise, but lacked the savoriness she craved. Sage and rosemary ended up being clear winners, but she’s already on to new flavors: Cinnamon-clove is going into production shortly, and she’s got a top-secret flavor in the works that she won’t even tell us yet.
The squares are still a study in simplicity. The ingredients are mixed in a bowl, shaped, cut and packaged. They’re not heated above 118ºF, so all the natural nutrients and enzymes are still present; they’re Kosher; and they’re free of gluten, dairy and refined sugars. Truly, a treat practically anyone can enjoy.
